Ginger Peach Sparkler (Printable version)

# What you'll need:

→ Fruit Base

01 - 2 large ripe peaches, peeled, pitted, and sliced
02 - 2 tablespoons fresh lemon juice

→ Ginger Syrup

03 - 1/4 cup fresh ginger, peeled and thinly sliced
04 - 1/2 cup granulated sugar
05 - 1/2 cup water

→ To Serve

06 - 2 cups chilled sparkling water
07 - Ice cubes
08 - Peach slices and fresh mint, for garnish (optional)

# Directions:

01 - In a small saucepan, combine ginger, sugar, and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce heat and simmer for 3 minutes. Remove from heat and let cool. Strain out the ginger slices.
02 - In a blender, puree the peaches with lemon juice until smooth.
03 - In a pitcher, combine the peach puree and 1/4 cup ginger syrup. Stir well.
04 - Fill four glasses with ice. Pour 1/4 of the peach-ginger mixture into each glass.
05 - Top each glass with 1/2 cup sparkling water, stirring gently to combine.
06 - Garnish with peach slices and fresh mint if desired.
