Green Goddess Avocado Cucumber (Printable version)

Refreshing mix of creamy avocado, crisp cucumber, and fresh herbs with a zesty dressing.

# What you'll need:

→ Salad Base

01 - 1 large head romaine lettuce, chopped
02 - 1 English cucumber, diced
03 - 2 ripe avocados, diced
04 - 4 radishes, thinly sliced
05 - 1/4 cup scallions, thinly sliced
06 - 1/4 cup fresh dill, chopped
07 - 1/4 cup fresh parsley, chopped

→ Green Goddess Dressing

08 - 1/2 cup mayonnaise
09 - 1/4 cup Greek yogurt
10 - 2 tablespoons fresh lemon juice
11 - 1 tablespoon white wine vinegar
12 - 1/4 cup fresh basil leaves
13 - 2 tablespoons fresh chives
14 - 1 small garlic clove
15 - 2 anchovy fillets (optional)
16 - Salt and freshly ground black pepper, to taste

# Directions:

01 - In a blender or food processor, combine mayonnaise, Greek yogurt, lemon juice, white wine vinegar, fresh basil leaves, fresh chives, garlic clove, and anchovy fillets if using. Blend until completely smooth and emulsified. Season with salt and pepper to taste. Transfer to a container and set aside at room temperature.
02 - In a large salad bowl, combine chopped romaine lettuce, diced English cucumber, diced ripe avocados, thinly sliced radishes, sliced scallions, chopped fresh dill, and chopped fresh parsley. Toss gently to distribute ingredients evenly.
03 - Drizzle the prepared Green Goddess dressing over the salad just before serving. Toss gently but thoroughly to coat all ingredients evenly with the dressing. Serve immediately, garnished with additional fresh herbs if desired.
