01 - In a medium bowl, mix Greek yogurt with honey, lemon juice, and lemon zest until smooth and creamy.
02 - If desired, toss blueberries with sugar or honey to lightly sweeten.
03 - In 4 glasses or jars, layer 2 tablespoons of granola, followed by a layer of lemon yogurt, then a layer of blueberries. Repeat the layers until all ingredients are used, finishing with granola and blueberries on top.
04 - Garnish with fresh mint and a sprinkle of lemon zest if desired. Serve immediately.
