Lemon Garlic Roasted Potatoes (Printable version)

# What you'll need:

→ Potatoes

01 - 2 lbs baby potatoes or Yukon Gold potatoes, washed and quartered

→ Marinade

02 - 3 tablespoons olive oil
03 - 3 cloves garlic, minced
04 - 1 large lemon, zested and juiced
05 - 1 teaspoon dried oregano
06 - 1 teaspoon salt
07 - 1/2 teaspoon freshly ground black pepper

→ Garnish

08 - 2 tablespoons chopped fresh parsley, optional

01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, whisk together olive oil, garlic, lemon zest, lemon juice, oregano, salt, and pepper until well blended.
