01 - Place cubed watermelon in blender and process until completely smooth
02 - Pour puree through fine-mesh sieve into large bowl to remove pulp for smoother texture
03 - Add sugar, lime juice, and salt to watermelon juice. Stir until sugar fully dissolved
04 - Transfer mixture to shallow freezer-safe dish and freeze for 30 minutes
05 - Stir vigorously with fork to break up ice crystals forming at edges
06 - Continue stirring every 30 minutes for approximately 3 hours until sorbet becomes scoopable and fluffy
07 - Serve immediately or store longer for firmer texture. Let stand at room temperature several minutes before scooping if very hard
