Zesty Frozen Lemon Yogurt Popsicles (Printable version)

Creamy frozen treats blending tangy lemon with Greek yogurt

# What you'll need:

→ Main Mixture

01 - 2 cups plain Greek yogurt
02 - 1/2 cup fresh lemon juice (about 2-3 lemons)
03 - 1 tablespoon lemon zest
04 - 1/2 cup honey (or maple syrup for vegan version)
05 - 1 teaspoon vanilla extract
06 - Pinch of sea salt

→ Optional Add-ins

07 - 2 tablespoons finely chopped fresh mint
08 - 1/4 cup mini white chocolate chips
09 - Thinly sliced lemon rounds for garnish

# Directions:

01 - In a large mixing bowl, add the Greek yogurt, fresh lemon juice, lemon zest, honey, vanilla extract, and a pinch of sea salt. Whisk thoroughly until the mixture is smooth and fully combined.
02 - Gently fold in any optional ingredients such as chopped fresh mint or mini white chocolate chips, if desired.
03 - Pour the mixture evenly into popsicle molds, tapping each mold lightly on the counter to release any trapped air bubbles. Insert popsicle sticks into the center of each mold.
04 - Place the filled molds in the freezer and freeze for at least 4 hours, or until the popsicles are completely firm throughout.
05 - To release the popsicles, briefly run the outside of each mold under warm water for a few seconds, then gently pull the popsicle out by the stick. Serve immediately.

# Expert Advice:

01 -
  • These popsicles taste like lemon meringue pie decided to go swimming on a stick.
  • Ten minutes of effort and your freezer does the rest, no churning or fancy equipment needed.
02 -
  • Under freezing will give you a sad slushy mess, wait the full four hours and test by pressing gently on the surface.
  • Taste the mixture before freezing because once solid the sweetness dulls noticeably and you cannot fix it later.
03 -
  • The cheapest popsicle molds often release better than expensive ones because the plastic is more flexible under warm water.
  • Zesting directly into the bowl instead of onto a cutting board preserves the fragrant oils that would otherwise evaporate away.
