05 - 1 cup vegetable broth
06 - 1 tablespoon dried oregano

08 - 1/2 teaspoon freshly ground black pepper

09 - 2 tablespoons fresh parsley, chopped (for garnish)
10 - Lemon wedges (optional, for serving)

# Directions:

01 - Set oven temperature to 400°F.
02 - In a large baking dish, combine olive oil, lemon juice, minced garlic, vegetable broth, dried oregano, salt, and ground black pepper. Whisk until well blended.
03 - Place potato wedges into the baking dish. Toss to thoroughly coat the potatoes with the marinade, then spread them out in a single, even layer.
04 - Roast potatoes uncovered for 40 minutes. Remove dish and spoon some pan juices over the potatoes.
05 - Raise oven temperature to 425°F. Gently turn potato wedges. Return to oven and roast an additional 30 to 35 minutes, or until the potatoes are deeply golden, crisp at the edges, and most liquid is absorbed.
06 - Sprinkle freshly chopped parsley over potatoes. Serve hot with extra lemon wedges if desired.
